Creamy, bright, and full of flavor—a simple drizzle that makes eating your veggies easy and ʻono!

Ingredients

  • ¼ cup tahini

  • 1 Tbsp maple syrup

  • Juice of 1 large lemon, about 3 Tbsp

  • ½ tsp smoked paprika

  • ½ tsp garlic powder or 1 clove fresh garlic, grated

  • ½ tsp salt (optional)

  • 3 Tbsp hot water, plus more as needed

Directions

  1. Add tahini, maple syrup, lemon juice, salt, garlic, and cayenne to a small bowl.

  2. Slowly whisk in the hot water until smooth and creamy.

  3. Add more water, 1 tablespoon at a time, until you reach your favorite consistency.

  4. Taste and adjust the lemon, salt, garlic, or spice.

  5. Drizzle over salads, Buddha bowls, potatoes, grains, beans, or steamed vegetables.

Make It Your Own

Make it curry: Add ½–1 tsp curry powder and a pinch of turmeric for a warm, flavorful curry tahini dressing.

Switch the citrus: No lemon? Try lime, orange, or a combination. Lime is especially good with rice-and-bean bowls.

Change the herbs: Blend in cilantro, parsley, basil, or green onion for a fresh herb dressing.

Make it smoky: Add ½ tsp smoked paprika or a little cayenne or chipotle powder.

Make it savory: Skip the maple syrup and add a little extra garlic, black pepper, or a splash of low-sodium tamari.

Make it lighter: Add extra lemon and water to create a thinner dressing. You'll get the same big flavor with less tahini per serving.

DDD Tip: Use dressing to make healthy food delicious—not to drown it. A little tahini + plenty lemon, water, herbs, and spices can go a long way!

🌱 Why This Dressing Works

One of the easiest ways to eat more vegetables is to make them taste good! This creamy dressing can turn a simple bowl of greens, beans, whole grains, potatoes, or vegetables into something the whole ʻohana looks forward to eating—without relying on cheese, mayonnaise, or oil-heavy bottled dressings.

Tahini is simply ground sesame seeds. It provides unsaturated fats, plant protein, calcium, iron, and other minerals. Because tahini is also a concentrated source of fat and calories, a little goes a long way, especially when weight loss and improving insulin sensitivity are goals. Thinning it with lemon and water lets us spread that flavor across a whole plate of fiber-rich food.

Lemon, garlic, herbs, and spices bring big flavor with very few calories. And that's really the secret: the greatest benefit of this dressing may be all the greens, beans, whole grains, potatoes, and vegetables it helps you enjoy more often. 🌺
